Marinated Mushrooms

INGREDIENTS:

  • 1.5 pounds cremini mushrooms, cleaned and trimmed
  • 1/4 cup olive oil
  • 1/4 cup white wine vinegar
  • 1/4 cup diced red onion
  • 2 cloves garlic, minced
  • 1-2 Tbs brown sugar, packed
  • 1/2 teaspoon italian herb blend
  • 1-2 teaspoon cracked black peppercorns
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 1 bay leaf, optional
  • Kosher salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley leaves

DIRECTIONS:

  1. In a large pot of boiling salted water, cook mushrooms just until tender, about 3-4 minutes; drain well.  Alternatively, roast small cleaned mushrooms at 400 for 14 minutes.
  2. In a large bowl, combine vinegar and sugar until sugar dissolves.  Add olive oil, red onion, garlic, Italian herbs, peppercorns, red pepper flakes and bay leaf; season with salt and pepper, to taste.  Mix warm mushrooms into marinade.
  3. Transfer to an airtight container and place in the refrigerator for at least 8 hours and up to 7 days.  These are beautiful in a jar.
  4. Serve cool or at room temperature, garnished with parsley, if desired.
