Sausage for a Crowd

Savory Sausage for a Crowd
2 - 3 pounds good quality Kielbasa or other sausage, cut into serving size pieces if desired (I use a mix of chicken sausage and kielbasa for parties where you may have chicken-only guests)
1/3 cup mustard
1/3 cup brown sugar
18-24 ounces beer
2 onions, thinly sliced

Preheat oven to 350 degrees.  Mix the mustard, brown sugar and half the beer together in a bowl or mixing cup, whisking to dissolve the sugar.  Add the rest of the beer and stir.  Place the sausage in a 13X9 nonstick pan, pour the mustard mixture over all and top with the onions spread across the top of the pan.  Grind black pepper generously over the top of the onions.  Cover and bake for an hour, then remove foil, mix/turn the sausage pieces (some will have split - this is good!) and continue baking for another hour.  Keep warm in a 200 degree oven until ready to serve.  Yum!

We served this with pierogies, but it would be great with a buffet of salads, with classic sausage-friendly foods such as baked beans or macaroni and cheese.  This is not a light meal, but it is fantastic for a cold winter night.
