Sausage, Potato and Kale Soup

Sausage, Potato and Kale Soup

1 pound Italian sausage (turkey is good!), cut into chunks or removed from casing
1 Tbs Olive Oil
Red pepper flakes (optional)
1 onion, diced
2 cloves garlic
2-3 cups peeled diced potatoes
1-1.5 qts chicken broth
1 tsp better than boullion
1 bunch kale, stems removed and leaves sliced into thin ribbons
1 cup heavy cream

Brown sausage in olive oil over medium high heat until well cooked.  Add diced onion and, if using, red pepper flakes and cook until onions are translucent.  Add garlic and cook until fragrant - 30 seconds or so.  Pour in the chicken broth and stir in the boullion.  Add the potatoes, bring to a boil and then lower heat to simmer.  Cook for 10 minutes.  Stir in the kale and cream and simmer until potatoes are tender and kale is cooked through - 10 or so minutes.
