Marinated Mushrooms
INGREDIENTS:
- 1.5 pounds cremini mushrooms, cleaned and trimmed
 
- 1/4 cup olive oil
 
- 1/4 cup white wine vinegar
 
- 1/4 cup diced red onion
 
- 2 cloves garlic, minced
 
- 1-2 Tbs brown sugar, packed
 
- 1/2 teaspoon italian herb blend
 
- 1-2 teaspoon cracked black peppercorns
 
- 1/4 teaspoon crushed red pepper flakes, optional
 
- 1 bay leaf, optional
 
- Kosher salt and freshly ground black pepper, to taste
 
- 2 tablespoons chopped fresh parsley leaves
 
 
 
DIRECTIONS:
- In a large pot of boiling salted water, cook mushrooms just until tender, about 3-4 minutes; drain well.  Alternatively, roast small cleaned mushrooms at 400 for 14 minutes.
 
- In a large bowl, combine vinegar and sugar until sugar dissolves.  Add olive oil, red onion, garlic, Italian herbs, peppercorns, red pepper flakes and bay leaf; season with salt and pepper, to taste.  Mix warm mushrooms into marinade.
 
- Transfer to an airtight container and place in the refrigerator for at least 8 hours and up to 7 days.  These are beautiful in a jar.
